This time, Edition Koji Shimomura will celebrate its 13th anniversary. We would like to express our sincere gratitude to our valued customers who always visit us.

EdiTion Koji Shimomura is celebrating its 13th anniversary, and I would like to express my heartfelt gratitude to our dear customers to whom we completely owe the reaching of this milestone.

 

During this time, I have visited various places in Japan and overseas, and have met with highly motivated producers, talented chefs, and highly sensitive artists.

Recently, I had occasions to travel to various places in Japan and abroad, where I met highly inspired farmers and producers, exceptionally talented chefs, and artists rich with creativity and emotion.

 

This year, I will be holding a long-awaited cooking event at Mandarin Oriental, Bangkok, my favorite hotel in the world for many years, and I will also be appointed as a tourism ambassador for Kunisaki City, Oita Prefecture in Kyushu, and as a support ambassador for Yamae Village, Kumamoto Prefecture. I received a lot of inspiration from my experiences such as receiving

This year started with realizing my long-held dream of doing a culinary event at Mandarin Oriental Bangkok, my favorite hotel in the world that I have been deeply in love with for many years. I was also appointed Tourism Ambassador of Kunisaki City, Oita Prefecture in Kyushu, as well as Support Ambassador of Yamae Village, Kumamoto Prefecture.

 

Gemstone ingredients, the wisdom of our predecessors, the bustle of the market, the heart-wrenching scenery...

Using the techniques of French cuisine, take these treasured fragments and put them into yourself, and spend time thinking about new expressions of cuisine. It's the work of editing, which is the name of the store.

Exquisite ingredients, the wisdom of our ancestors, the energy of the market, beautiful scenes etched into the heart…

I process and interpret these treasure-like fragments within myself using the techniques of French cuisine, then transition to a period of thinking to create dishes that have a new form of expression. restaurant name “Edition.”

 

Nothing would make me happier than to be surprised, delighted, and excited with each bite.

I don't want to pretend to be eccentric, but I don't want to rest on the power of the classics, but I want to always achieve rational evolution.

There is nothing that makes me happier than when a guest is surprised and delighted with every bite, and thrilled as the menu proceeds.

Without being deliberately different, nor resting on the back of tradition, I would like to continuously evolve in a way that is rational and justified.

 

I want as many people in the world as possible to enjoy my cooking. .

This is the “Edition Koji Shimomura” that I am aiming for.

My wish is for as many people as possible in the world to experience my cuisine.

That is the EdiTion Koji Shimomura that I strive for.
