​Koji Shimomura

Born in Ibaraki prefecture. Moved to France in 1990.
Returned to Japan after studying for eight years at prestigious restaurants, including the 3-star Michelin Guide "La Côte d'Or" in France.

2007 Opened "Edition Koji Shimomura" in Roppongi, Tokyo.
The following year, it won two Michelin stars, and in 2021 it will be the 13th time.
In addition to his rich knowledge and solid technique, he continues to fascinate gourmets around the world with his unique style full of free ideas.
In recent years, for example, supervising JAL first class in-flight meals and JR Kyushu cruise train "Seven Stars in Kyushu" desserts, launching the tableware brand "SIMON", cooking events in Bangkok, Thailand and Singapore, and various places in Japan Activities are not limited to the kitchen, such as being actively involved in regional revitalization.
Many ambassadors have been appointed, including Ibaraki Prefecture Ambassador, Ibaraki Prefecture Hitachiota City Tourism Ambassador, Oita Prefecture Kunisaki City Tourism Ambassador, and Kumamoto Prefecture Yamae Village Support Ambassador.
